For the Clementine Cordial (makes 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Premix (yields 850ml, enough for 10)

200ml citrus syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Instructions

For the Cordial: Put every ingredients inside a pan, heat until it reaches a simmer, mixing so the sugar melts. Next, turn off the stove and leave to cool down completely. Decant into an sealable bottle, seal and store chilled, it can be stored for around four weeks.

To make Batch Mix: Combine all the spirits and syrup in a sizeable container, allow it to infuse for one hour, then strain , ideally through cheesecloth, making it completely strained.

For serving: Measure 85ml from the batch mix into your stirring glass containing ice, and agitate gently for about 60 seconds to chill. Pour into a chilled martini glass or equivalent, garnish with the cranberries and finish by giving it a quick spritz with the mandarin essence above the glass.
